Quick question, where are created instances stored, on Windows and on macOS?

Do you mean the settings of the instance?

On macOS ~/Library/Application Support/GigPerformer/Gig Performer.INSTANCENAME
the standard settings are stored under ~/Library/Application Support/GigPerformer/Gig Performer.settings

Perfect, thank you! And I see now that on Windows they are stored in C:\Users\[USERNAME]\AppData\Roaming\Gig Performer\
