=> how do I increase the size of the font in the Red rectangle in the pic (?) and maybe even “center” it (?)

You can’t change the size/position of that.
Your alternative is to add the rackspace/variation name to a label widget on a panel. You can size/position that as you like.
To do this, add the System Actions plugin to your rackspace, as it includes parameters for the rackspace/variation name.
