On some Mac Mini computers the screen resolution has a huge impact on how good the audio performance is. Seems that the scaling puts a lot of load on older Mac computers.
For example, in this thread, a user reports that his computer is completely unusable for VSTs even with large buffer sizes the computer is connected to a large monitor.
Possible solution: Try to use the standard resolution.
